Deep inside Colombia’s department of Cauca, in “La Zona Cafetera”, you find the small province of Inza. It’s in a mountainous region, and from Inza you can actually see Nevado del Huila, the highest volcano in Colombia. The province has poor infrastructure, and rain, mudslides and road closures make it complicated to access. But the climate, soil and unique nature make for a truly outstanding coffee bean. Inza has quickly become one of our all-time favorite coffee regions.

With this background, the Inza area has gained notoriety in the coffee world for being a particularly distinctive growing region, producing flavors that are quickly recognized by the astute palate.

Where many coffee growers in Colombia have moved toward growing 100% Castillo (a newer hybrid variety), many farmers in Inza still grow Variety Colombia, Caturra, and even Typica. Pair this with the unique microclimate that Inza has become known for, and what you get is dark fruit tones like plum and raisin, alongside classic Colombian chocolatey and nutty flavors.

This particular selection was made possible by the Pillimue Family, who've led their community in Organic practices. Surprisingly, many farmers in this area have always used organic practices, but thanks to the Pillimue family, 80 of the 200 farmers they work with, are now fully organic certified. The Pillimue family was able to build a cupping lab and collection center near their home. It is through this space the family has worked directly with most of their neighbors to increase quality and yields in order to produce excellent quality coffee.

The investments made by the family and by the local farmers are ever present in the cup. We are extremely proud to be able to present this Inza coffee as our Fabula espresso coffee.

Where our coffee comes from is important. We proudly provide the very highest grade, single-origin coffee beans in the world. You can taste its origin, intricate and complex characteristics, just like in the world of fine wines.

Finding great coffees is like a hunting for treasures. The best coffees come from remote areas, grown deep inside the jungle, at high altitudes. There often is no infrastructure. No paved roads. There are mudslides. Heavy rainfalls... But the coffee... oh, it is worth it.
