High in the soaring mountains of Chimbu Province, deep in the Papua New Guinea highlands, sits a coffee that took a long road to your cup. Grown by smallholder farmers organized through the Siane Organic Agriculture Cooperative (SOAC) in the Chuave district, these beans come from a place where reliable roads barely exist and every step from cherry to export is hard-won. SOAC was built to change that - connecting farmers directly to international buyers, financing community projects, and investing in gender equality and education across its member villages. Cherries are hand-picked from shade-grown Bourbon and Typica trees, then fully washed at the village station and sun-dried on raised beds. What lands in your cup is a quietly distinctive Papua New Guinea coffee - round and balanced, with the deep cocoa sweetness of a great dark chocolate, a soft note of ripe papaya, a brown-sugar middle, and the kind of clean, black-tea finish you usually only find in carefully grown highland coffees.

Shade-grown

Commercial grade coffee plants are grown in the sun, where they don’t have the natural biodiversity that they need to thrive. As a result, the beans grow smaller – and develop less flavor.

Fabula coffee grows in the shade, where the plants are protected from pests (so farmers don’t need to use pesticides). With the top soil full of nutrients – like decomposing leaves and insects – the coffee is able to grow at a more natural pace. So the beans get bigger – and have a richer, more intricate profile.

Single Origin

Many coffee brands rely on blends, since they can be sourced year-round – and help mask stale or low-quality beans. The result? A generic, muddled taste without much (if any) complexity.

Fabula Coffee comes from a single source. Ensuring that all of the beans are of the same quality – and come from the same location, climate, temperature and farming practices. So the coffee has a more robust taste – and is more sustainable.

Grows at a high-altitude

To cut down on costs, most commercial coffee is grown at low altitudes, where the coffee beans can be easily retrieved. Only problem? The coffee tree endures harsher growing conditions, like higher temperatures and less rainfall. So the coffee beans mature faster than they should – and the resulting taste is… not as good.

At high altitudes (above 3,900 feet), it’s more expensive to transport the coffee beans – but worth it. Because the cooler temperatures slow the growth cycle of the coffee plant. Which allows it to absorb more complex sugars, resulting in a rich, defined flavor.

Fabula coffee grows at altitudes of 7,000+ feet. Which is another reason why it tastes so good!

Thing is, coffee peaks 6-7 days after roasting – and then the flavors start to fade. So after about two months, most of the intricate, delicious aromas and flavors are gone.
