Caramel and caramel candies have been with us for centuries, but their exact origins are a bit murky. It is believed that Arabs first discovered caramel around 1000 A.D. This was a hard, crunchy type of caramel, created by crystallizing sugar in boiling water. 

The sweet treat made its way to Europe via traders, and from there to America. Around 1650, American settlers were making hard candies in kettles. At some point milk, cream or butter was added to the recipe at some point, resulting in a softer, chewy treat, also known as toffee.

Caramel becomes caramel when milk solids are heated with sugar ingredients. Sugar syrups are then added to the milk , and the mix is allowed to caramelize. Caramels can have different textures today. “Short” caramels tend to have a softer texture. “Long” caramels are chewier. Either way both textures are delicious!

The flavor of caramel is often described as sweet and buttery, with subtle notes of dairy or even vanilla. These notes go extremely well with coffee, often being more chocolatey and nutty in the profile. The flavors balance each other out perfectly, creating a delicious, sweet but complex beverage. Among flavored coffees, this combination is one of the very, very best.
