Fabula’s “Sip of the Month” is a different and exclusive offering coming out every 4 weeks. It is a wonderful way for our fellow coffee-fans to try a different region, bean or roast. 

“Fabula” means story. We believe every bean has a story to tell, connected to the regions, history, environments, and their farmers.

Colombia has long been a leader in coffee, largely thanks to the success of “Juan Valdez”. Introduced in 1958, this fictional farmer helped distinguish Colombia from its peers and solidified the reputation of Colombian coffee for excellence. While Colombia remains a top-five coffee producer, its most recent harvests stand out for their quality, as many other coffee-growing regions in the Americas face numerous challenges.

This is why we chose to bring Perla de Inzá into the rotation. The municipality of Inzá lies in the heart of the Colombian Massif, a mountainous region where major rivers like the Magdalena, Cauca, and Patía originate. Surrounded by volcanoes, Inzá’s altitude and climate create ideal conditions for growing specialty coffee.

Small producers in Inzá preserve their traditions by cultivating coffee on small plots of land with little to no chemicals. The Pillimue Family, important members of the community, have led efforts to certify 80 producers in organic practices, setting an example for sustainability and quality.

Through workshops, these producers teach others how to recycle farm waste and create inexpensive, natural fertilizers. Their work has fostered innovation, sustainability, and a commitment to improving the coffee-growing community in Inzá.
