Our Medium Roast Decaf is sourced from the regions of Mexico's Southeastern highlands, close to Guatemala's border. Beyond fabulous coffee, the region is famous for colonial fortresses and varied ecosystem of both sandy beaches and snowcapped mountains.

Our decaf is processed using the Swiss Water method. It is a completely natural and chemical-free process. It involves soaking the beans several times, filtering the water, and the result is a cleaner, chemical free bean, which retains much more of its unique flavor and aroma characteristics. We source from remote communities situated in the mountains and highlands. Most of the producers in this group are indigenous people who've produced coffee for several generations.

We work via cooperatives that genuinely improves the lives of its coffee-farming members, seeking to ensure that coffee farming is holistic and provides a livelihood to all the farmers in the cooperative. They establish "best practices" for all farmers to have fully organic farms that also directly benefit the environment through stewardship and diversification. They offer continued training to its members on topics of sustainability, traceability, and marketability.

The cooperatives do a lot for its members and continues to find new outlets for their high-quality specialty coffee. Fabula is proud to have their coffee in our portfolio.

Where our coffee comes from is important. We proudly provide the very highest grade, single-origin coffee beans in the world. You can taste its origin, intricate and complex characteristics, just like in the world of fine wines.

Finding great coffees is like a hunting for treasures. The best coffees come from remote areas, grown deep inside the jungle, at high altitudes. There often is no infrastructure. No paved roads. There are mudslides. Heavy rainfalls... But the coffee... oh, it is worth it.

First timer

The coffee is good, but not quite as rich and bold as I like. I do not have issues with stomach upset or reflux so I can’t speak to that with Fabula. I am enjoying it and will finish the bag, but will look for a bolder, richer decaf. I can only drink decaf coffee.

Outstanding decaf

At first I wasn’t happy as I was having some issues with grinding. This is normal with decaf as it becomes very flaky and goes everywhere. I started grinding into a small stainless steel cup which made the whole process more manageable. I was rewarded with an outstanding flavorful, robust cup of coffee. It’s expensive for the amount of coffee you get but it’s ok and recommend it.
