“Fabula” means story. We believe every bean has a story to tell, connected to the regions, history, environments, and their farmers.

Coffee came to Nicaragua in the mid-1800s and quickly found its place, without needing to compete with dominant crops like indigo or bananas. Within just two decades, it became the nation’s top export, and by the early 1900s, coffee accounted for 65% of Nicaragua’s exports. The Jinotega region alone saw its coffee production triple between 1895 and 1926.

Unlike many coffee-producing regions, Nicaragua's growth in coffee did not lead to widespread deforestation. Today, nearly all Nicaraguan coffee is shade grown, a practice that supports biodiversity, conserves water sources, and protects soil health. This natural harmony remains a point of pride among growers.

Procafe, a cooperative founded in 2011 in San Juan del Río Coco, Madriz, was established to help producers market their coffee and improve family livelihoods. With 165 members—56 women and 109 men—they grow varieties such as Marsellesa, Parainema, and Caturra at elevations of 800–1370 meters.

After harvest, cherries are transported to Procafe’s dry mill in Condega, where optimal conditions and mesh-screen patios allow for even, sun-driven drying over 25 days. Moisture is constantly monitored, and all coffee is grown under shade and certified Regenerative Organic—ensuring soil health, social fairness, and environmental care.
