Fabula’s “Sip of the Month” is a different and exclusive offering coming out every 4 weeks. It is a wonderful way for our fellow coffee-fans to try a different region, bean or roast.

“Fabula” means story. We believe every bean has a story to tell, connected to the regions, history, environments, and their farmers.

This Sip of the Month selection is not just a gem of a cup, but also a vivid marker of progress in the specialty coffee world. Peruvian coffee was once considered more functional than refined, but that’s changing. As farmers across the globe began exchanging varietals and methods, coffees like this emerged—elegant, sweet, and full of nuance.

Geisha, once exclusive to Panamanian estates, thrives in the right hands and high altitudes. This micro-lot, combining Geisha and Caturra, comes from smallholders in northern Peru who have embraced meticulous harvesting, fermentation, and drying to unlock the full potential of these delicate - and highly prized- beans.

Two of those producers—Elmer Guevara Zamora and Lorenzo Arbildo Ubillus—grow coffee in Chirinos, Cajamarca, at elevations near 2,000 meters. Their farms, El Alcanfor and La Palma, benefit from fertile soil, cool temperatures, and sustainable, organic practices passed down and refined over time.

Nearby, Dervis Huamán’s Finca Life’s Nature stands out as a model of regenerative farming. By nurturing microclimates and fostering soil health, he grows exceptional coffee while protecting the land for future generations. Together, these farmers represent a new chapter for Peruvian coffee—one rooted in tradition, uplifted by innovation, and fueled by purpose.
