“Fabula” means story. We believe every bean has a story to tell, connected to the regions, history, environments, and their farmers. This limited release is a wet-hulled processed coffee, a method completely unique to Indonesia. 

Coffees from Sumatra are regarded highly for their rustic intensity: flavors that would feel out of place in a cup of Colombian or Kenyan coffee just land on the palate as fitting and at home in a cup of Sumatra. Wet-hulling, or “giling basah” in the native Bahasa language, is one big reason why.

Wet hulling is a process devised in Sumatra and adopted throughout the region as a solution to rainy, humid conditions that make drying green coffee a challenge. Typically, farmers depulp freshly picked coffee cherries, ferment overnight, and wash the seeds before selling to a mill or collector only partially dried. 

The coffee's husk (parchment) is removed at a much earlier stage than in a standard washed process, while the green seed is still soft and pliable; great care is needed to prevent excessive damage. After milling, the coffee seeds are then finally dried until optimum moisture content is reached.

This lot is triple-picked to help ensure a clean and sweet coffee of paramount quality. Triple-picked describes the preparation of green beans and means that coffee has been sorted and cleaned three times during the harvest and processing stages to eliminate defects and unripe cherries.  The typical practice at most origins is to do this one or two times.
