“Fabula” means story. We believe every bean has a story to tell, connected to the regions, history, environments, and their farmers. This limited release is from one of the very best coffee growing regions: Isimbi in Rwanda. 

This coffee from Katana in the Democratic Republic of Congo is a softer version of what most would expect from natural (or dry) processed coffees.  Some naturals (meaning the full cherry is intact during the drying of the seed in the middle that we call a coffee “bean”) can be fruit bombs on the palate that are a little too high-toned. Unlike lots from more Easterly African nations, this selection from Democratic Republic of the Congo is mellow and rounded with softer sensations.

 This organic lot is from the Katana station in South Kivu, which produces specialty coffees to improve livelihoods  for smallholder farmers in the region.  The Katana area is blessed with abundant rainfall, and the excess water supply ensures ample irrigation for small-holder farmers.

Climate, altitude, and the varieties being grown are all in everyone's favor, but RAOS stands apart through its attention to detail in processing: RAOS has a central processing station for wet- and dry-milling, which helps improve the consistency and the quality in the cup. 

Many coffee producers now experiment with practices that result in coffees that don't typify what is traditionally expected from their origin/country, but not this one. This Honduran coffee still tends to live up to their reputation as “mild”; nutty, sweet, heavy-bodied but without the oomph of acidity that characterizes some brighter coffees.
